Cheesecake update! [Jan. 1st, 2007|03:24 pm]
Listen in, listen Ian!
If you can't find frozen concentrated orange juice when you want to make an orange cheesecake, don't just assume that you can subsitute the juice of four limes and make a lime cheesecake instead. It won't work, and you just end up with a slightly sweetened flavour cheesecake. Not entirely unpleasant, but a bit bland.

What you should have done, right, was to make lime curd with the limes, spread that over the base then flavour the cheese part with the lime zest.

Ew, zest is nasty.

Why is it nasty? You just grate it on the finest part of your grater and it virtually dissolves. What's really fucking horrible is big chunks of ready-chopped candied peel which remind me of early '70s wedding cakes. They also used to put BISTO in them to make them brown because they used white sugar instead of the more expensive soft brown sugar. Gravy and glacé fingernail flavour cake, YUM. Not to mention the marzipan which was made of sugar-paste heavily dosed with almond flavouring and yellow colouring.
