Why is it plural? I'd have thought a single pork brain would more than fill a can. I've carried a pig's head around and it was bloody heavy.

Yeah, like you can guarantee good results with just one pig's brain. What if you got a rubbish one? You have to bung half a dozen together, and mix it up for a nice, generic product. OK, so it's never as good as Mum used to make, where you chose the pig yourself, but at least you guarantee a certain quality level.
