The trouble with making my own bread is that it's so nice my dinner ends up being just bread and butter. Which might be missing out on one or two of the essential vitamins and minerals.

You could take a multivitamin tablet as well, freeing you to enjoy the yummy homemade bread in a guilt-free manner.

Maybe: I'm not dietitian. However, good bread and good butter on its own is more than enough to make me happy. It's not like you're eating it every day (are you?).

I did that last night, too! I was on my second attempt at making soda bread. (Not as disastrous as the first, but still not awesome - does it somehow know I hate Guinness and scowl through St Patrick's Day?) Wouldn't normally be a problem, but breakfast was porridge and lunch was a fried-egg sandwich - I think the most vegetablicious thing I ate yesterday was some brown sauce. I'm a terrible vegetarian.

If you're eating a balanced diet across the whole day, there's nothing wrong with the occasional meal of bread and butter. Equally, there's nothing wrong with occasionally eating a meal consisting entirely of, e.g., veg with no protein (salad, veg soup), or protein (cheese! meat!) with no veg.
